Foodie Friday: Fast & Frugal Feast

Feel like there’s no time for dinner? Seriously–no time to slow down and sit down and eat, much less make food on that thing in the kitchen that gets hot. What’s that called again? Oh yeah–the stove! Blogger Barbara Shoff is giving us a fast, frugal and favorite recipe of her own to try out this week.
Family Food Feast

1 lb. sausage (brown in the bottom of big pot) Stir in
2 cups small nugget TVP (textured vegetable protein available most health food stores) mixing well and add
3 cups of water, simmer ten minutes (the tvp will taste just like the sausage)
Add one envelope of chili flavoring OR 5 tbls. chili powder and 1 tsp. cumin. Simmer 5 minutes.
Add 1 can diced tomatoes (can be flavored with onions or peppers)
Add 1 can refried beans. Stir in well to thicken. Simmer and turn on low until ready to serve
Serve in bowl over your favorite corn chips and sprinkle top with shredded cheese.
