Leftover Recipe: Scalloped Potatoes and Ham Casserole

Leading up to the holidays there is a lot of cooking. The weird thing is that after the holidays, my family STILL.WANTS.FOOD! The nerve! I’m spent, the last thing I want to do is go grocery shopping, but if I have to pull out the leftover dressing, green bean casserole, or rolls again, I just may puke.

I love this recipe because I have everything already, it’s slightly different that what we have been eating, and even better it’s all in one dish, cooks on its own, and there is virtually no clean up.

Ingredients
2 cups milk
3 tablespoons butter
3 tablespoons all-purpose flour
1/4 cup diced onions
1 teaspoon salt
3/4 teaspoon paprika
6 large potatoes, peeled and thinly sliced
2 cups diced fully cooked ham
1 cup (4 oz) shredded cheddar cheese
Directions
  1. Preheat oven to 350 degrees.
  2. In a small saucepan heat butter over medium heat. Stir in flour, onion, salt and paprika until smooth.
  3. Gradually add milk to the mixture.
  4. Bring to a boil; cook and stir 1-2 minutes or until thickened.
  5. In a greased 13 x 9 inch baking dish, layer potatoes and ham; pour sauce over top.
  6. Bake, covered 15 minutes. Uncover; bake 40-50 minutes longer or until potatoes are tender.
  7. Sprinkle with cheese; baked 5-10 minutes or until edges are bubbly and cheese is melted.
You can also substitute with leftover mashed potatoes if you want. You will need 4 cups of mashed potatoes. Also, decrease your milk to 1 1/2 cups and cook for only 20 minutes uncovered.
Most years, my family is excited for holiday food because they know that this yummy leftover dish will be coming soon after.
