Progressive Potluck: Main Dish Round

Skinny Lo Mein

This is a great healthy alternative to Chinese take out! The wonderful thing about this recipe is you can switch out the meat and vegetables with any that you prefer or to change it up!

 

Skinny Chicken Lo Mein8oz Barilla Protein spaghetti noodle, broken in half
1 cup boiling water
1 chicken bullion cube
3 tablespoons soy sauce
1 tablespoon brown sugar
Olive oil
1lb chicken, cubed
2 large carrots, thinly sliced
2 cups broccoli, cut into small pieces
1 onion, chopped
4 garlic cloves, minced1) Cook spaghetti as directed on package
2) Put about a tablespoon of oil in pan. Let it heat up. Then, add chicken. Stir frequently until no longer pink.
3) Boil water. Add bullion cube, soy sauce and brown sugar.
4) Add water mixture to pan of chicken. Bring to a simmer.
5) Put about a tablespoon of oil in a second pan. Let it heat up. Then, add the carrots. Cook for about three minutes. Add broccoli and cook until desired tenderness. Add onion and garlic. Next, add chicken mixture to veggie mixture. Let simmer.
6) Serve chicken and veggies over spaghetti noodles. Enjoy!
