I work full time, take care of the usual household duties, run my blog and I have a busy social life too. When it comes to cooking, I need quick! I try to be health conscious too, so I’m usually looking for quick meals that are on the healthier side. Today I’m sharing one of our absolute favorite meals! It’s quick, versatile and nothing you have to feel super guilty about.
5-6 frozen chicken tenderloins OR 3-4 frozen breasts
1 packet of taco seasoning
1 cup of your favorite salsa
1 can of Rotel, Lime Cilantro is my favorite
1 can of corn
1 can of black beans
-Toss everything in the crock pot except for the beans, cook on low for 5-6 hours or high for 3 hours.
-Shred chicken with a fork, mix in the black beans and cook for another 30 minutes.
The possibilities are endless with this dish and it freezes great too.
